Marce - I make pancakes with either sour cream, ricotta or yogurt and they are all good and somewhat similar. Sour cream and ricotta tend to give greater desnity and moisture in pancake texture (hard to describe) than yogurt. I chose a jam (from Trader Joe’s, if you’re curious) with large chunks of strawberries and spooned it onto the unbaked sour cream cake batter once I had spread it into the baking pan. I gently swirled some of it into the batter, being careful not to over mix and turn my swirl into strawberry cake batter. Cake: Cream butter and sugar, then blend in bananas, sour cream, egg, orange peel, and vanilla. In a separate bowl, combine remaining dry ingredients.

Once it was smooth, I added 2 teaspoons of lemon juice to sour it. Fold in the sour cherries. Blend in sour cream with mixer on low.

Stir together sour cream, oil and applesauce in a small bowl. Stir sour cream mixture into flour mixture just to mix. Add the flour mixture in 3 additions, alternating with sour cream. Blend in the sour cream, vanilla, and zest if using. Stir in the flour mixture.

In a separate bowl, mix together vanilla, sour cream, egg whites and margarine. Using an electric mixer at low to medium speed, beat until well blended, about 2 minutes. Mix in 1/3 the flour mixture, then 1/2 the sour cream, then 1/3 the flour mixture, then the remaining sour cream, then the remaining flour. The batter will be quite thick. Beat in the eggs, 1 at a time, then beat in the sour cream and vanilla. Fold in the flour mixture, in 2 parts, until just combined.
