Wild deer and elk can be infected with a disease called chronic wasting disease (CWD). CWD is a progressive, debilitating neurological disease that belongs to a family of diseases known as Transmissible Spongiform Encephalopathies (TSEs) that includes "mad cow" and scrapie (found in sheep). Wild venison has a gamier flavor, and since one of the foods deer like to eat is the leaves of bay trees, bay compliments venison well. In Germany, venison is often cooked with fruit like cherries or served with a cherry sauce, as the gamy flavor goes well with certain acidic fruits. Wild turkeys are cool.
